Chicken Tikka Masala is the dish that introduced the world to Punjabi tandoor cooking, and at Saanjh we treat it with that same respect. We start with tikka — boneless chicken cubes marinated in spiced yogurt and charred in the tandoor — then finish them in a thick, slow-simmered tomato-and-onion masala spiked with fresh ginger, garlic, and cracked pepper.
